This recipe goes well with for instance plain rice, bread or mashed potatoes.
The ingredients are fit for about two portions.
- 1 Cup white beans.
- 200 Gram spinach.
- 2 Tomatoes.
- 2 Spoons ghī or sesame oil.
- 1 Teaspoon grated ginger.
- ½ Teaspoon dried sage.
- ½ Teaspoon paprika powder.
- 1 Teaspoon tomato powder.
- ¼ Teaspoon black pepper powder.
- 1 Spoon lemon juice.
- ¾ Teaspoon salt.
- Soak the beans for about 12 hours and drain them.
- Cook the beans in fresh water until done. Drain them and keep them on a very low flame warm without burning.
- Blend the tomatoes until smooth and cut the spinach.
- Heat the ghī or sesame oil.
- Add the ginger, sage and paprika and fry them for a few seconds.
- Add the tomatoes, tomato powder and black pepper powder and cook untill the sauce is done.
- Add the spinach and beans and cook a few moments untill the spinach is just done.
- Put the heat low and add the lemon juice and the salt.
